Working in China

Working as an expat chemist in China
Dr. Kai Pflug, Management Consulting – Chemicals, Shanghai, and Dr. Stephen Pask, SteDaPa Consulting, Düsseldorf

-

According to the OECD China’s economy will exceed that of the Euro Zone in 2012, in 2016 that of the USA. It can be expected that the chemical industry will follow these developments. Thus, the rapid development of the Chinese economy over the last 10 to 15 years and the continuing robust growth has led to it being not uncommon for western chemists to spend several years in a Chinese subsidiary as part of their career development. Working in China as a Western expat requires some adaptation to local conditions even when the employer is a multinational company. Obviously the challenge is much bigger for an expat working for a Chinese company and especially for a state-owned enterprise (SOE). This paper is based on some of the experiences that Western chemists have made in such a situation – quite likely many of these experiences are shared by expats employed by Chinese companies in other industries but our focus is on the chemical industry.

Falafel with Humus and Zhug.
Zhug
5 fresh peperoni, 3 cloves of garlic, 1 Tsp. ground cumin,
¼ Tsp. ground or 4 whole green cardamons, 1 blck cardamon (optional)
½ tsp. salt and freshly ground black pepper
Put the dry ingredients in a mortar and grind to a powder, then add the peperoni and 1-2 Dsp. water and continue to grind to form a paste. (You can also use a coffee grinder…I have one which I only use for spices!) With red peperoni the sauce is red…and perhaps a better warning of the power!! When removing the seeds from the peperoni do remember to either wear rubber gloves …or wash your hands very carefully immediately afterwards! Covered, this sauce can be kept in the “fridge for at least a week.

Chinese Dumplings

DSC01452.jpg

This basic recipe should give ca. 50 “dumplings” which is enough for 6 for a snack or a light meal/additional course.
500g Flour (Grade 405)…if available this can be mixed 50/50 with rice flour.
300g lean pork (It’s best to take a piece of the filet)
50 g Dried small shrimps (From the Asia shop)
A small Chinese cabbage
A small leek
A piece of root ginger (The size of a walnut or bigger depending how liked the flavor is!)
Soya sauce, sesame oil, fish and oyster sauce (The latter can also be bought from most Asian shops)
Black rice vinegar (The best is from Shanxi province as in an absolute emergency you can use Aceto Balsamico…but not ordinary vinegar!)
